Grilled Panzanella Salad

Grilled Panzanella Salad


  • 1 large tomato (chopped)
  • 1 cup cucumber (chopped)
  • 3/4 cup fontina cheese (cubed)
  • 1/2 cup fresh Basil (torn)
  • 1/4 Parsley (torn)
  • 1/4 cup Fresh lemon juice
  • 2 T Red wine vinegar
  • 1 tsp Sugar
  • Salt
  • Pepper
  • 3 T Extra virgin olive oil
  • 5 slices French bread
  • 1 Red bell pepper (cut into large pieces)
  • 1/2 Small red onion (cut into large pieces)

Step 1
Toss tomato, cucumber, cheese, olives, and herbs together in a bowl; cover and chill
Step 2
Whisk lemon juice, vinegar, sugar, salt, and pepper together in a small bowl. Drizzle with oil until blended.
Step 3
Rub bread, bell pepper, and onion with oil using your hands; season with salt.
Step 4
Grill bell pepper and onion then bread; coating each with olive oil and garlic. Pour all contents in a bowl and mix.
